Simple , soft, sweet potato tortilla, no oil, 4 points each Recipe: a good ratio rule of thumb for this recipe is simply 1 part steamed and mashed sweet potatoes to 1 part whole wheat flour. Add as much all purpose flour needed to create a soft dough that is easier to work with.
I used 2 cups sweet potatoes and 2 cups whole wheat flour ( added 1 tablespoon of baking powder to the flour first).
Then I added up to 1/2 cup of all purpose flour to create my dough. Desperate the dough into 12 3 inch diameter balls and roll out to about 6-8 inches in diameter. Cook over medium high heated cast iron pan until each side bubbles up and has a few toasted spots. Cool and store in fridge in a ziplock bag.
These came out to roughly 4 points Freestyle per serving and are very satisfying!
